Hospitality and Catering Curriculum Philosophy and Intent Statement KS3 and KS4
Our students at the King’s Leadership Academy Hawthorne’s will embark on a food adventure, learning key skills which will enable them to apply the principles of the Eat Well Guide. They will work with a wide variety of foods and different processes to produce well balanced meals and establish healthy choices for now and in the future.
The department has strong cross-curricular links with Science and Maths, giving students the opportunity to apply their learning in different contexts, developing the broad range of scientific and technical knowledge needed to support their culinary skills. This enables the creation of affordable and healthy meals, encouraging imagination and practicality, whilst making and evaluating dishes.
Students will be learning about the importance of nutrition and the function of food in maintaining a healthy body. They will be taught the importance of food hygiene, learn crucial skills such as time management, critical thinking, and the ability to multitask. Students will be encouraged to analyse, discuss, describe, and evaluate their dishes through a variety of verbal and written formats. These skills will equip students with the knowledge to ensure they are less likely to fall into regional negative statistics. Living a happy and healthy life without the additional complications of food related health conditions, which can be avoided with good quality education and an in-depth understanding of the concepts taught.
Hospitality and Catering is taught the whole year, allowing staff to teach the importance of buying produce in season to make sustainable food choices with consideration of the impact on their environment. We hope to instil the love of cooking, whilst developing resilience and tolerance both in the classroom and in the wider community, giving them the ability to educate future generations making a positive change.
Many of our students choose to continue their food journey into KS4. Using prior knowledge gained at KS3 to ignite their passion for food and nutrition. Developing a wide range of products considering the dietary needs of different individuals. The department aims to continue to develop critical thinkers who are confident, reflective, and independent workers who can follow recipes and develop creative flair when producing their own dishes. Fostering an appreciation for food from a wide variety of countries opens opportunities for pursuing the many career paths involving food, cooking and the hospitality industry.
All students will be positively impacted by their food adventure which started at Kings Leadership Academy Hawthorne’s Hospitality and Catering Department.
We aim to ensure that all our pupils who are disadvantaged or have any special educational needs and/or disabilities (SEND) have access to a carefully planned curriculum. Our curriculum aims to provide pupils with SEND with explicit systematic teaching and rehearsal of knowledge. We also ensure that these pupils have the time they need to study important subject content in hospitality and catering.

Assessment
In order to check of how well our pupils are learning the curriculum, teachers use a full range of assessment techniques. This includes diagnostic questions to reveal your child’s preconceptions and common misunderstandings and end of topic/learning cycle assessments.
